Many like Scriven­er - you can write in the way you want, tak­ing notes, snap­shots, adding research and much more. Full screen mode.  So far mac only.

It’s a favourite of mine: seems to put the bit and pieces togeth­er in order to hope­ful­ly gain­ing some­thing coher­ent, fur­ther interesting.
